Healthy Double Chocolate Muffins

I finally found the hidden veggies muffin recipe I’ve been searching for. It’s the Healthy Double Chocolate Muffins recipe from Foodlets. I like it because you make veggie puree out of whatever combo you want of zucchini, spinach, sweet potato, carrot, apple or banana–I imagine it would also work with cauliflower and pumpkin–so it’s a little more freestyle and flexible. Also, the banana is optional, and the recipe does not call for cinnamon. I don’t know who decreed that every damn toddler food have banana and cinnamon in it, but I’m OVER IT. 😜 They’ve got a good chocolate flavor. I find myself eating them. 😉 HELTH. Oh but also JP seems to like them too.

Double fisting muffins

Ingredients

  • 1 cup veggie/fruit puree
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ½ teaspoon fine salt
  • 1 tablespoon baking powder
  • 1/2 cup cocoa powder
  • 1/2 cup mini chocolate chips

Instructions

  1. Combine oil, egg and sugar in a large mixing bowl.
  2. Add 1 cup of pureed vegetable mixture and stir.
  3. Sift flour, baking powder, salt and cocoa powder over top of liquid ingredients.
  4. Add mini chocolate chips.
  5. Stir until JUST incorporated.
  6. Use an ice cream scoop to get uniform scoops into a greased muffin pan.
  7. Bake at 400 degrees F 15 minutes
