Prune Bars

My ongoing quest to get JP to poop brought me to a prune bar recipe (I was looking at fig newtons and thought to myself… Surely there must be something like prune newtons?). It was pretty good so I made it again, but this time added cranberries (just cuz I like em) and some carrots (cuz I had some getting old in the fridge and, hey, fiber). The end result is, unfortunately, yet another toddler food that we like just as much, if not more, than the actual toddler does. 😆 How am I supposed to cut down on snacking in these conditions?!

Filling

  • 7-8oz prunes (or, 7oz prunes and 1oz dried cranberries….ish)
  • 1 1/2 cups apple juice

Simmer for 25-30 minutes until juice is mostly evaporated. Put into food processor, pulse until jammy (I added the carrots here).

Crust

  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 6 tbsp butter
  • 2/3 cup brown sugar
  • 1 tbsp oil
  • Some amount of cinnamon…probably about a teaspoon
  • 2 tsp vanilla
  • 1-2 tbsps water

Cream butter and sugar, mix & add dry ingredients, then add oil, vanilla, and just enough water that the dough sticks together.

Put about half (or a little more) of the dough in an 8×8 pan; bake for about 25 minutes. Spread the filling over the bottom crust and put the rest of the dough on top (I had success both crumbling it and rolling it out). Bake for another 25 minutes.
